Hash browns

I’ve always lived potatoes but lately I have been really craving potatoes. What shape, form or seasoning isn’t important as long as it’s potatoes. Although I’m not a fan of normal boiled potatoes.

So my latest potato creation was hash browns. I served them with beans and fried mushrooms. Come to think of it I basically took all the best parts of an English breakfast.

Hash browns

Serves 1 person

2 potatoes

1/4 – 1/2 yellow onion finely chopped

Pinch of salt

Pinch of black pepper

Pinch of paprika powder

Peel the potatoes and grate them on a grater. Place the grated potatoes in a kitchen towel and squeeze out the moisture. Mix with spices and the onion in a bowl. Heat a fryingpan to medium heat with some butter and place a spoonful of the potato mixture in the pan, flatten and cook for 5 minutes or until you see the sides turning golden brown. Flip the hashbrown over and cook on the other side. 

Eat as it is or with the normal things you’d have in an English breakfast. For the traditional Swedish way to eat it don’t add the paprika and serve with lingonberry jam.
